PANCIT or pansit is one classic dish we don’t get tired of eating. Any event — from the simple to the grand — is never without pancit, a traditional noodle dish cooked in soy sauce and other spices mixed with meats such as pork, chicken and chicken innards, beef, shrimp and other seafood, and vegetables. Actually, we cook and eat pancit at any given time and day. Pinoys also go the extra mile in search for the best pancit in town. One such place is Binondo, world’s oldest Chinatown, where a number of restaurants serves this stir-fry sensation.

Founded in 1866, the resto takes pride in keeping its original recipes the same since its inception — one of which is its famous pancit canton asado.

Its crown jewel, maki mi is an egg noodle soup served with melting-soft tenderloin slices, beaten egg, diced spring onion in thick, brown sauce.

Its bihon canton guisado with squid, chicken, liver, and shrimp toppings is a winner aside from beef hotpot and other Chinese food.

Famous for its legendary pancit miki bihon guisado, record has it that former President Ferdinand Marcos always ordered this noodle dish together with fried chicken because they were his favorites.

There are more restaurants and stalls that sell and serve pancit in Binondo. All you have to do is choose the one that suits your taste and preference. For us Filipinos, pancit symbolizes good health and long life. No wonder pancit is considered a dish for all occasions and seasons.
